A Rainy Evening With Homemade Rustic Tortellini & Sausage Soup!
It seems like it has been raining in Northern California for thirty days and thirty nights. We aren’t building the ark quite yet but we have started selecting our rations – wine & food. Thank goodness I am married to an Italian that knows how to cook because tonight’s adventure in the kitchen was perfect on a cold and rainy night. You can enjoy this hearty soup with our Sean Minor Four Bears 2006 Napa Valley Cabernet Sauvignon or any red wine with good acidity and well integrated tannins. Nicole doesn’t really measure, but this is what I got from the conversation:

Heat 2 TBL olive oil
Brown 3 Italian sausages in 1 inch rounds (mild or hot, whichever you prefer)
Add 1/2 chopped yellow onion, cook till transparent
Add 3 cloves garlic (diced)
Add 1/2 cup of each, chopped carrots, chopped celery, chopped asparagus (really any great veggie in the fridge)
Add 1/2 cup fresh chopped parsley
1 TBL diced fresh rosemary
Salt and pepper to taste
After those are incorporated (5 minutes or so) De-glaze the pot with 1/2 cup of red wine
Add 1 can of diced tomatoes
Add 3 cups chicken broth (she made it from the leftover COSTCO roasted chicken, yum!)
Add 1/2 cup water (if you need to make the homemade stock go further)
Heat and then add 6 ounces of cheese tortellini (can be frozen), let it cook 30 minutes and serve.

This made enough for 6 people, don’t forget some warm bread for soaking up the broth!!
